Paris will always have a particular vibe when it comes to French Cuisine. France has a deep and long-running love affair with pastry. It’s no wonder the World’s Top Pastry Chef is French.
Paris is full of world-class top pastry chefs and Christophe Adam is one of them. Owner of L’Éclair de Génie in Paris, he is known for reinventing one of the best Parisian pastries in the world: l’éclair. Bringing his rock’n’roll French touch signature, the éclairs became works of art. L’éclair de génie has several boutiques throughout Paris with hundreds of different flavors of eclairs, all the creations of pastry chef Christophe Adam. If you are in Paris and want to enjoy one of the chef’s delicious signature éclairs, try these locations:
- L’Éclair de génie – 14 Rue Pavée, 75004 Paris

Loving to reinvent himself and his brand, L’Éclair de Génie, the chef opened a brand new Pastry Café, on October 4, 2022, called L’Éclair de Génie Café.
This pastry café will soon become an iconic place, just like the pastry shops. Everything is amazing from the moment you open the doors. The ambiance is super elegant and the staff is friendly and well-prepared. And we were lucky to stumble upon the chef Christophe Adam who served us. Talk about bespoke treatment!
Just go and try their trompe l’œil cappuccino that hides a delicious tiramisu. The water lily hot chocolate is something you’ve never tasted before.

1. TROMPE L'ŒIL: A NEW KIND OF TIRAMISU
POV: You order a tiramisu and you receive a trompe-l’œil cappuccino
It was early in the morning when I went to discover this brand-new pastry café. I went with my dearest friend, as we usually love discovering Parisian hidden gems. So, the first thing I did, even before taking a seat was to order a cappuccino. My friend, as she did her homework before arriving, ordered the trompe-l’œil tiramisu.
The chef Christophe Adam was the one that prepared our order and brought us first the trompe-l’œil tiramisu. I look shocked at the “cappuccino” and say to him: “Oh my God, the cappuccino is so small. I’m gonna need five of those to wake up”.
And I immediately jumped to drink it, when my friend, thank God, stopped me from destroying the tiramisu. And this is how I discovered the trompe-l’œil tiramisu. It looks so real that you take it for a cup of cappuccino. Even the milk foam is reproduced impeccably. I think of myself as a cappuccino specialist and trust me, I did not see this coming. Even the sugar cube is served with the cappuccino and is made out of chocolate.
The taste is more than delicious. One of the best I had outside Italy. It’s just fine pastry at its best. Chapeau to the Chef!
2. HOT CHOCOLATE LOTUS FLOWER
This is another mastery of Chef Christophe Adam: the lotus hot chocolate. It’s frothy, creamy, and comforting once you taste it. The lotus flower is made from white chocolate and reproduces impeccably the flower.
When you receive it, you have just a closed lotus flower in front of you. But once you pour the hot chocolate it opens up, revealing itself to you and inviting you to delve into the passion fruits taste.
The entire Café is all about curated experiences and unmissable delights, 100% artisan.
It goes very well with an XXL signature croissant that you can dig into the hot chocolate and enjoy it!
